When I was a kid summer was all about sprinklers, kickball, and popsicles. Of course those popsicles were surely full of sugar, corn syrup, artificial flavors, and probably not much else. Luckily, healthy and Paleo popsicles are pretty easy to make. Plus, I just got these new silicone popsicle molds I’ve been waiting to try.

Nothing says summer like Pina Coladas, and I already had all the ingredients needed. So, I made some tasty Pina Colada flavored Paleo popsicles. Making them was super easy. Check it out.

Just throw the following ingredients (which will make about 12 popsicles) in the blender:

  • 1 cup ice
  • 1 pineapple, cut into large chunks
  • 1 banana, peeled
  • Juice from 1 large lime
  • 1 can full fat coconut milk
  • 1 TBS raw honey

Then just fill up the popsicle molds and freeze. If you are using the silicone ones I used or similar, leave a little space at the top to allow for expansion. I don’t have a stand, so I just put 3 popsicles in a glass to keep them upright in the freezer (and then my hubs can use the chilled glasses later for beer, so win-win). I let freeze overnight, but silicone freezes quickly so they should be ready in a few hours.

Leave about an inch of room at the top of the popsicle mold before freezing.
