Just because you are eating grain-free doesn’t mean you have to give up muffins. There are amazing recipes using almond and/or coconut flour. Muffins are a perfect snack because they are easy to make, easy to pack, and easy to freeze. So, I present: Nut Butter Banana Chip Muffins, Gingery Carrot Muffins, Orange Chocolate & Vanilla Muffins, and Cinnamon Muffins. Your family is sure to love at least one of the recipes below.
These muffins are grain-free, gluten-free, dairy-free, soy-free and corn-free, and Paleo and GAPS-legal/adaptable.

For ALL OF THE MUFFINS below, follow these directions:
Directions
- Preheat oven to 350 degrees.
- Combine all of the wet ingredients together in a large mixing bowl.
- Combine all of the dry ingredients together in a separate mixing bowl.
- Mix the wet ingredients together using a hand mixer.
- Gradually stir in the dry ingredients, continuing to mix until smooth.
- Pour batter into muffin tins lined with parchment baking cups (these recipes make a dozen regular-sized muffins, give or take).
- Bake for about 20 minutes, or until a toothpick comes out clean.
- Let cool, and then enjoy!
Nut Butter Banana Chip Muffins
These are my favorite muffins. If I make them after the kids go to bed, sometimes I finish them all (having a little evening snack, and then as a breakfast with my morning coffee or tea).
Ingredients
- 4 eggs
- 2 very ripe mashed bananas
- 1/2 cup nut butter (almond or cashew), peanut butter (which is GAPS but not Paleo legal) or sunflower seed butter
- 2 TBS softened ghee or coconut oil
- 1 TBS gluten-free vanilla extract
- 1/2 cup coconut flour
- 3/4 tsp baking soda
- 3/4 tsp baking powder (this one is corn-free – which is still not Paleo – or you can make your own grain-free version)
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp sea salt
- 10 oz semi-sweet dairy-free chocolate chips (optional) – I use these, but because they have some sugar they are not Paleo/GAPS-legal (a small cheat for us). You can always make your own – I haven’t been that ambitious yet, but I’ll post if I try to do this!
Gingery Carrot Muffins
This is a new recipe for us that I kind of threw together and it ended up tasting really good. So, if you want some veggies in your muffin, this is a perfect choice.
Ingredients
- 3 eggs
- 1/4 cup raw honey
- 1/4 cup softened ghee or coconut oil
- 1 TBS almond extract
- the solid part of a can of full-fat coconut milk (scoop off the top part that has hardened only, and save the liquid for something else, like the Orange Chocolate & Vanilla Muffins or the Cinnamon Muffins)
- 3 carrots, peeled and shredded
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 3/4 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp freshly grated or ground ginger
- 1/2 tsp sea salt
Orange Chocolate & Vanilla Muffins
Okay, so this recipe isn’t for muffins that are chocolate and vanilla – I made half of them chocolate and half vanilla. I thought about making them both, as layered muffins, but that seemed like a lot of work for muffins. A idea for a future cake, maybe. So, what I did was combine all the ingredients except the cacao, and then fill half the muffin trays. Then, I added in the cacao to the remaining mix and filled the rest of the trays – making half of the muffins Orange Chocolate and half of them Orange Vanilla.
Ingredients
- 4 eggs
- 1/2 cup full-fat coconut milk
- 1/4 cup softened ghee or coconut oil
- Zest from one orange
- Juice from one orange (about 4 TBS)
- 1/8 cup of raw honey
- 1 TBS gluten-free vanilla extract
- 1/2 cup coconut flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/8 cup raw cacao powder (eliminate for all vanilla muffins, or double for all chocolate)
Cinnamon Muffins
In one of my summer newsletters, I featured this “Cinnamon Vanilla Paleo Muffins” recipe from Healy Eats Real. This is my go-to muffin recipe for school parties and events. It’s super quick and easy, and it’s always a crowd-pleaser. This looks a little darker than they usually turn out because I let my kids sprinkle the cinnamon on top – they were pretty liberal! Here are the ingredients, with only minor adjustments.
Ingredients
- 4 eggs
- 1/4 cup softened ghee or coconut oil
- 1/2 cup + 2 TBS full fat coconut milk
- 1 tsp apple cider vinegar
- 3 TBS raw honey
- 1 TBS gluten-free vanilla extract
- 1/2 cup coconut flour
- 1/2 tsp baking soda
- 1 tsp cinnamon + some to sprinkle on top
