It might seem like the holidays are hard for those of us who eat grain-free. While it is definitely difficult to eat (and avoid!) anything store bought, holiday recipes are actually pretty adaptable. This includes yummy Christmas cookies, like these grain-free chocolate chips. You don’t need corn syrup, artificial dyes, or sugar to satisfy your sweet tooth. And though cookies might not be the healthiest food, these are oh-so-clooossseee to being guilt-free!

These are the chewy chocolate chips that I make with almond flour. They are so simple and my kids love them. I realize that chocolate chips are pretty versatile and not limited to the holidays – but the only time my mom ever baked cookies from scratch was at Christmastime, and they always included chocolate chips. So, I can’t imagine the holidays without them. This recipe is grain-free, gluten-free, dairy-free, and corn-free, and almost (there is organic cane sugar in the chips) Paleo and GAPS-legal.

Grain-Free Chocolate Chips

Ingredients

Directions

  1. Preheat oven to 350 degrees.
  2. Combine almond flour, baking soda, and salt in a large mixing bowl and stir well.
  3. Combine eggs, honey, vanilla, and softened ghee in a smaller bowl and mix well with an electric mixer.
  4. Add wet combination to dry combination and mix until a cookie batter forms.
  5. Stir in chips with a large spoon or spatula.
  6. Spoon dough onto cookie sheets lined with parchment paper.
  7. Bake 10-12 minutes, until edges slightly brown.
  8. Let cool and serve.
  9. Enjoy!
